This Roasted Corn Molcajete Guacamole is a simple, fresh side or appetizer made with creamy avocado, lightly charred corn, organic vegetables, fresh lime, cilantro, and a touch of jalapeño. Making it in a molcajete gives it a rustic texture and brings out the flavors of the fresh ingredients.
Roast the Corn
Heat the ghee in a skillet over medium-high heat. Add the corn and cook for about 4–6 minutes, stirring occasionally, until lightly charred and golden in spots.
Remove from the heat and allow the corn to cool slightly.
Make the Molcajete Mixture
Add the onion, jalapeño, cilantro, and sea salt to your molcajete.
Using the tejolote, grind everything together until you have a coarse, fragrant paste. Or For a thicker, chunkier guacamole, simply grind the ingredients less
Add the Avocado
Cut the avocados in half, remove the pits, and scoop the flesh into the molcajete.
Gently mash the avocado into the aromatic mixture, leaving some chunks for texture.
Add the Fresh Ingredients
Fold in the diced tomato, lime juice, and roasted corn.
If using, sprinkle in the chili powder and freshly ground black pepper, then gently mix everything together.
