Ingredients
  

Chicken & Peppers
  • 6 organic bell peppers any color
  • 6 pasture-raised bone-in chicken thighs
  • 1 tbsp ghee
  • 1 tsp Pink Himalayan sea salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika
Marry Me Chicken Filling
  • 2 tbsp ghee or use rendered chicken fat from roasting
  • 1 yellow onion finely diced
  • 4 cloves garlic minced
  • ½ cup sun-dried tomatoes finely chopped
  • 1 tsp red pepper flakes optional
  • ¾ cup organic chicken broth
  • ¾ cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 2 cups cooked jasmine rice
  • 2 cups fresh organic spinach chopped
  • cups shredded mozzarella cheese divided
  • 2 tbsp fresh basil chopped
Toppings
  • Extra Parmesan cheese
  • Remaining mozzarella cheese
  • Fresh basil for garnish

Instructions
 

Roast the Chicken & Peppers
  • Preheat your oven to 400°F.
  • Slice each bell pepper vertically in half from top to bottom. Remove the seeds and membranes, then arrange the pepper halves cut-side up in a baking dish.
  • Pat the chicken thighs dry with a paper towel. Season both sides with salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika.
  • Heat 1 tablespoon of ghee in a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 6–8 minutes, until the skin is golden and crisp. Flip and sear for another 2–3 minutes.
  • Transfer the chicken thighs to the oven alongside the prepared peppers. Roast for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F and the peppers begin to soften.
  • Remove the chicken from the oven and allow it to cool slightly before handling.
Prepare the Filling
  • While the chicken and peppers roast, prepare the jasmine rice according to the package instructions.
  • Using the same skillet with the flavorful chicken drippings, heat over medium heat. Add 2 tablespoons of ghee if needed, then add the diced onion. Cook for 3–4 minutes until softened.
  • Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  • Stir in the chopped sun-dried tomatoes and red pepper flakes.
  • Pour in the chicken broth and scrape the bottom of the skillet to release the flavorful browned bits. Add the heavy cream and bring the mixture to a gentle simmer.
  • Stir in the freshly grated Parmesan until melted and the sauce becomes creamy.
  • Stir in the chopped spinach and cook until wilted.
Add the Chicken & Rice
  • Remove the bones from the roasted chicken thighs and shred or chop the chicken into bite-sized pieces. For extra flavor, you can also chop the crispy roasted chicken skin and mix it into the filling.
  • Add the chicken to the creamy sauce and stir until coated.
  • Fold in the cooked jasmine rice, half of the mozzarella cheese, and fresh basil. Taste and adjust the seasoning if needed.
Stuff the Peppers & Finish Baking
  • Spoon the Marry Me Chicken filling evenly into each roasted bell pepper half.
  • Top with the remaining mozzarella and extra Parmesan.
  • Return the stuffed peppers to the oven and bake uncovered for 10–15 minutes, until the cheese is melted and lightly golden.
Serve
  • Remove from the oven and garnish with fresh basil and extra Parmesan. Serve warm with your favorite side.
