Ingredients
  

Roll-Up:
  • 2 large eggs
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 3 slices turkey
  • Shredded cheddar cheese to taste
  • 1/4 cup white onion diced
  • 2 handfuls fresh spinach
  • 1 tbsp ghee
Sauce:
  • 2 tbsp Greek yogurt
  • 1/2 avocado
  • 1 tsp lime juice
Topping:
  • 1 tbsp dried chives

Instructions
 

Preheat Oven
  • Preheat to 375°F (190°C).
Bake the Eggs
  • Whisk eggs with seasonings, pour onto a parchment-lined pan, and bake for 10 minutes.
Sauté Veggies
  • Cook onion in ghee, then add spinach until wilted.
Cook Turkey
  • Lightly brown turkey slices in the same pan.
Make Sauce
  • Mash avocado and mix with Greek yogurt and lime juice.
Add Cheese
  • Sprinkle cheese over baked eggs and return to oven until melted.
Assemble
  • Spread sauce over eggs, add veggies and turkey, then roll tightly.
Finish
  • Top with chives, slice if desired, and serve.
