Coconut Rice
- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 cup water
- Pinch of salt
Garlic Butter Shrimp
- 1 lb wild-caught shrimp peeled and deveined
- 3 tbsp butter
- 4 cloves garlic minced
- Salt and pepper to taste
- 1 tbsp fresh lemon juice
Roasted Chickpeas
- 1 can chickpeas drained and rinsed
- 1 tbsp ghee
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt to taste
Paprika Mayo
- 1/3 cup avocado oil mayonnaise
- 2 tsp paprika
- 1 tsp fresh lemon juice
- 1/2 tsp garlic powder
- Pinch of salt
Toppings
- 1 mango diced
- 1 avocado sliced
- Sesame seeds
- Celery microgreens
Cook the Rice:
Rinse rice and mix with coconut milk, water, and salt in pot.
Bring to boil then simmer for 15 minutes or until fluffy.
Roast the Chickpeas:
Coat chickpeas in ghee and toss in paprika, garlic powder, salt, and pepper.
Bake at 400°F for 20–25 minutes until crispy.
Make the Sauce:
Mix mayonnaise, paprika, lemon juice, garlic powder, and salt.
Assemble the Bowl:
Add rice, shrimp, chickpeas, mango, and avocado. Drizzle with sauce.
