Ingredients
  

Coconut Rice
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 cup water
  • Pinch of salt
Garlic Butter Shrimp
  • 1 lb shrimp peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic minced
  • Salt and pepper to taste
  • 1 tbsp lemon juice
Roasted Chickpeas
  • 1 can chickpeas drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt to taste
Paprika Mayo
  • 1/3 cup mayonnaise
  • 2 tsp paprika
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • Pinch of salt
Toppings
  • 1 mango diced
  • 1 avocado sliced
  • Sesame seeds
  • Celery microgreens

Instructions
 

Cook the Rice:
  • Rinse rice and cook with coconut milk, water, and salt until fluffy.
Roast the Chickpeas:
  • Bake at 400°F for 20–25 minutes until crispy.
Cook the Shrimp:
  • Sauté garlic in butter, add shrimp, and cook until pink. Finish with lemon juice.
Make the Sauce:
  • Mix mayonnaise, paprika, lemon juice, garlic powder, and salt.
Assemble the Bowl:
  • Add rice, shrimp, chickpeas, mango, and avocado. Drizzle with sauce.
Serve & Enjoy:
  • Top with sesame seeds and microgreens and enjoy fresh.
