What’s in this Caldo de Pollo?

This caldo comes together with simple, nourishing ingredients that build layers of savory flavor while adding plenty of protein, vegetables, herbs, and comforting aromatics. Each ingredient has a purpose, whether it’s creating a flavorful broth, adding texture, or contributing important nutrients.

1. Pasture-Raised Bone-In Chicken Thighs – Bone-in chicken thighs provide tender, flavorful meat and high-quality protein that helps support muscle maintenance and everyday body functions. Keeping the bone in also adds deeper savory flavor to the broth as the chicken simmers.

2. Chicken Broth or Water – Chicken broth creates a rich, savory base, while water can be used for a lighter broth or to give you more control over the seasoning. Add more broth or water anytime the liquid reduces during cooking or if you prefer a brothier caldo.

3. Organic Yellow Onion – Yellow onion adds natural sweetness and savory depth to the broth while becoming soft and tender as it cooks. Onions also provide vitamin C, fiber, and naturally occurring plant compounds.

4. Organic Garlic – Garlic adds a warm, savory flavor that infuses throughout the broth and becomes deliciously tender as it cooks. It contains sulfur-containing compounds and other naturally occurring plant compounds that contribute to a nutrient-rich diet.

5. Bay Leaves – Bay leaves add a subtle earthy, herbal flavor that gives the broth more depth. Culinary herbs also contain naturally occurring plant compounds with antioxidant properties, although they are used in small amounts.

6. Salt – Salt enhances the natural flavors of the chicken, vegetables, and seasonings and helps bring the entire broth together. Since chicken bouillon can also contain sodium, taste before adding additional salt.

7. Mexican Oregano – Mexican oregano gives the broth its distinctive earthy, aromatic flavor and pairs especially well with chicken. It also provides small amounts of naturally occurring plant compounds.

8. Black Pepper – Black pepper adds mild heat and enhances the savory flavors throughout the broth. It contains piperine and other naturally occurring plant compounds.

9. Cumin – Cumin adds a subtle warm, earthy flavor that gives the broth additional depth without overpowering the vegetables. It also contains naturally occurring antioxidant compounds.

10. Garlic Powder – Garlic powder reinforces the savory garlic flavor throughout the broth and helps round out the seasoning. It contains naturally occurring compounds found in garlic, although fresh garlic provides more overall nutritional value.

11. Onion Powder – Onion powder adds another layer of savory, slightly sweet onion flavor to the broth. It contains small amounts of naturally occurring plant compounds found in onions.

12. Chicken Bouillon Powder – Chicken bouillon intensifies the savory flavor of the broth and gives the caldo a richer, more concentrated taste. Because sodium levels vary between brands, add it gradually and adjust the seasoning to taste.

13. Organic Carrots – Carrots add natural sweetness, color, and tender texture while providing beta-carotene, which the body can convert into vitamin A to support normal vision and immune function. They also provide dietary fiber that supports digestive health.

14. Organic Potatoes – Potatoes make the caldo more filling by providing carbohydrates for energy along with potassium, a mineral involved in normal muscle and nerve function. Their soft, hearty texture makes them especially satisfying in a bowl of soup.

15. Organic Corn – Corn adds natural sweetness and a pleasant bite while contributing carbohydrates and dietary fiber. It also provides nutrients such as folate and naturally occurring carotenoid compounds.

16. Organic Zucchini – Zucchini adds mild flavor, moisture, and a tender texture that balances the richer chicken broth. It provides vitamin C, potassium, and other plant nutrients.

17. Organic Cabbage – Cabbage adds volume, texture, and subtle sweetness as it softens in the broth. It provides vitamin C, vitamin K, and dietary fiber that support normal immune, bone, and digestive functions.

18. Organic Roma Tomatoes – Roma tomatoes add brightness, natural acidity, and sweetness that balance the savory broth. They provide vitamin C and lycopene, a naturally occurring carotenoid antioxidant.

19. Fresh Cilantro – Cilantro adds a bright, fresh herbal flavor that helps balance the richness of the caldo. It also provides vitamin K along with smaller amounts of vitamin C and other plant compounds.

20. Fresh Lime – Fresh lime adds a bright acidic finish that wakes up the flavors of the broth and vegetables. It also provides vitamin C, which supports normal immune function and helps the body absorb iron from plant foods.

21. Organic Avocado – Avocado adds creamy texture and satisfying richness to the hot broth and tender vegetables. It provides fiber, potassium, and heart-healthy monounsaturated fats.

22. Warm Corn Tortillas – Warm corn tortillas are a simple, delicious accompaniment for dipping into the flavorful broth. They provide carbohydrates for energy and make the meal feel even more hearty and complete.

23. Favorite Salsa – Salsa adds freshness, acidity, and customizable heat to each bowl. Depending on the ingredients, it can also provide additional vegetables and beneficial plant compounds.

24. Fresh Serrano or Jalapeño – Fresh serrano or jalapeño adds crisp texture and a spicy kick for those who enjoy extra heat. These peppers provide vitamin C and capsaicin, the naturally occurring compound responsible for their characteristic spiciness.

25. Mexican Rice, Optional – A scoop of Mexican rice added directly to the bowl makes the caldo extra hearty and satisfying while soaking up some of the flavorful broth. It provides carbohydrates for energy and turns the soup into an even more substantial meal.

26. Cotija Cheese, Optional – A little Cotija adds a salty, savory finish that pairs beautifully with Mexican rice, avocado, lime, and the rich broth. It also provides protein and calcium, although it can be relatively high in sodium, so a small amount is plenty.

Serving Suggestions

This Caldo de pollo is delicious on its own, but a few fresh toppings and traditional-style sides can make each bowl even more flavorful and satisfying.

  • Fresh Lime – Squeeze fresh lime juice directly over your bowl right before eating for a bright, citrusy finish. The acidity cuts through the rich broth and brings out the flavor of the chicken and vegetables.
  • Mexican Rice – Add a scoop of homemade Mexican rice directly into your bowl, just like I love to do. The rice soaks up some of the flavorful broth and makes the caldo extra hearty and satisfying. Click here to view the recipe!
  • Avocado – Add diced avocado for a creamy contrast to the hot broth and tender vegetables. Its mild flavor and healthy fats make the soup feel even more satisfying.
  • Warm Corn Tortillas – Serve warm corn tortillas alongside the caldo for dipping into the flavorful broth or enjoying with the chicken and vegetables. They add a simple, comforting carbohydrate to the meal.
  • Favorite Salsa – Spoon your favorite salsa over the top for extra acidity, freshness, and heat. A smoky roasted salsa or spicy green salsa would be especially delicious with this caldo.
  • Fresh Serrano or Jalapeño – Add thinly sliced serrano or jalapeño if you love a little extra heat. The fresh peppers bring a crisp, spicy contrast to the rich broth.
  • Cotija Cheese – Sprinkle a little Cotija over the top, especially if you’re serving the caldo with Mexican rice. Its salty, savory flavor adds a delicious finishing touch.

Storage Tips

Allow the Caldo de pollo to cool before transferring it to airtight containers. Store the chicken, vegetables, and broth together so the flavors continue to develop as the soup rests.

  • Refrigeration – Refrigerate leftovers in airtight containers for up to 4 days. Reheat only the amount you plan to eat for the best texture and quality.
  • Freezing – Freeze cooled caldo in freezer-safe containers for up to 3 months. Leave a little space at the top of the container to allow for expansion as the soup freezes.
  • Reheating – Thaw frozen caldo overnight in the refrigerator, then gently reheat it on the stovetop until heated through. If the broth has reduced during storage or reheating, add a splash of chicken broth or water to bring it back to your preferred consistency.

Ingredient Substitutions & Variations

Caldo de Pollo is an easy soup to customize depending on what you have available or how you like your bowl.

  • Chicken Broth or Water – Use chicken broth for a richer, more savory base or water for a lighter broth. You can also use a combination of both.
  • Corn – Use fresh corn on the cob or frozen corn kernels. If using corn on the cob, cut each ear into 2–3 pieces before adding it to the pot.
  • Chicken Thighs – Bone-in chicken thighs provide the richest flavor, but you can substitute another chicken cut if preferred. Keep in mind that cooking time may vary depending on the cut.
  • Vegetables – Adjust the vegetable combination based on what you have available. You can add more of your favorites while keeping the same comforting broth.
  • Spice Level – Add serrano or jalapeño to individual bowls rather than the pot if everyone prefers a different level of heat.
  • Broth Amount – This caldo is meant to be nice and brothy. If the liquid evaporates during cooking or there simply isn’t enough broth for your liking, add more chicken broth or water as needed.
  • Seasonings – Taste the broth before serving and add more salt, Mexican oregano, black pepper, cumin, garlic powder, onion powder, or chicken bouillon if you feel it needs more seasoning.

Common Mistakes to Avoid

A few simple tips will help you get flavorful chicken, tender vegetables, and plenty of delicious broth every time.

  • Starting With Too Little Liquid – Begin with 8 cups of chicken broth or water, but don’t feel like you have to stick to that exact amount. Simmering can cause the broth to evaporate, so add additional broth or water whenever needed.
  • Overcooking the Vegetables – The vegetables only need about 20 minutes once they’re added to the pot. Keep an eye on them so they become tender without completely falling apart.
  • Cutting Vegetables Too Small – Large chunks hold up better during simmering and give the caldo its hearty texture. Smaller pieces can become overly soft before everything else is finished.
  • Forgetting to Taste the Broth – Bouillon brands vary in saltiness, and the broth can change as it simmers. Always taste before serving and adjust the seasonings to your liking.
  • Removing the Garlic and Onion Too Early – Leave the garlic and quartered onion in the soup as it cooks. They become tender and continue adding flavor to the broth.
  • Not Adjusting the Broth at the End – If the caldo reduced more than you wanted, simply add more chicken broth or water. There’s no need to settle for a soup that isn’t brothy enough for your preference.
  • Adding Cilantro Too Early – Adding the fresh cilantro near the end keeps its flavor brighter and fresher. You can also add extra cilantro directly to each bowl before serving.
